And you don't think about things like "did a menstruating woman sit on that chair or seat previously" either. It's good to be free from the letter of the law.

This is why I always pray over my food. Not as some religious exercise but as a matter of faith in what is said here. If anybody has a problem with that they can take it up with the Holy Spirit who inspired that. :)
I don't have a problem with that. We should pray for God's protection and blessing over all that we eat.
I pray for God's protection over my life when I am on the road. I also, as much as possible, try to drive within the speed limit and avoid behavior that can cause me accidents.
Same thing with food. I pray over my food but it is unlikely that I would have a diet of nothing but donuts, ice cream and chocolate mousse and then ask God to protect me from diabetes.
Just remember, Satan used promises of God's protection to try to get Jesus to jump from the pinnacle of the temple. Jesus did not deny the validity of the promise. He responded with something from the Word: "Tempt ye not the Lord thy God."
But, don't let that stand in the way of anyone eating animals that are willing to eat their own bloody testicles. Deeelishus!

A lot of things in the law were accommodations to an already established mindset (slavery, more than one wife, divorce, etc.) Many things in the law of God were not God's best. Basically, God was saying if you are going to have slaves, multiple wives or whatever then this is how you are going to treat them.
yet, on the other hand, some of the laws concerning childbirth are advance medical knowledge from God that doctors practice today. The food laws were not just ritual but had practical value. If God closes a blind eye to everything people eat then one would have to wonder why diabetes, cancer, and other sicknesses are running so rampant in people's bodies?

Having said what I did, I don't eat it all that often. Just too much trouble to cook. I cook it in the oven when I do as it's much easier to clean up. But sitting here I can't think of the last time I ate bacon, or the last time I bought bacon that wasn't pre-cooked. My mother likes it so we buy the pre-cooked kind that you just throw in the microwave for 10 or so seconds since it's much easier that way.

That's what Mark 16 is for. The context of 1 Timothy 4 and that statement is people forbidding to eat meats, certain foods, etc. Not whether or not something might be wrong with it per se. But it does work for that also. But obviously I'm not going to eat a piece of meat I know someone poisoned.

The food selection may have had some practical value in relation to the situation back then but far less today. Is there anything that suggests that people who eat kosher today are healthier than those who pay no attention to that ? Any statistics, for instance.

Jesus dealt specifically with the multiple wives issue by referring to how things were created from the beginning, one man and one woman. He doesn't deal specifically with slavery nor do the epistle writers condemn it outright. OT mindedness and lawmindedness, the mindset of applying those things without filtering them through a new covenant lense has historically been a powerful tool in the hands of pro-slavery people, enabling them to use the Bible to justify the continuation of slavery including in the US.
Most people who entertain that mindset tend to be very selective about which OT rules they choose to apply. They will skip the ones about slavery and menstruation, for instance. Then pick some other ones that they personally or their particular direction within Christianity happens to approve of. I understand the thing about holding the ten commandments as more relevant than the other commandments in the law but beyond that there seems to be very little justification for the way they select OT rules for approval or disapproval. It's more a question of "what I feel like" or "what my church's tradition says".
