    Doesn't that ruin the taste ? If I grill an entrecote for too long then it loses its distinctive taste and tastes like any other steak.

    Medium or medium well. I used to get it well done until one time I said the wrong word and got a great steak. it was pink inside and was so good so that is the
    way I order it now. My husband likes his extra rare. No way.

    At some point the undercooked steak ought to be hazardous in terms of bacteria. Extra rare ?!

    That is the way he cooks it at home and also when he orders it at a restaurant. Not my choice but his.
