Nothing wrong with oil and fat in the right context, the right context being no or little carbs. I eat all the fat I want and lose weight. Paella is rice based which is high carb. I suspect it was just added weight due to the weight of the food and water retention due to the carbs. Of course if you eat it regularly it will turn into true added weight.
If you double your food intake during one day you're likely to gain about 300-400 grams of real weight. That's how much fat 2100-2800 calories deposit as. Then you're likely to eat less than normal the next day(s) because you feel full. What one eats on average over a long period of time is what matters. Add just 5% to a 2500 calorie daily intake and it adds up to 6.5 kilos or 14 pounds per year.

it probably had a lot of sodium in it too, which adds to the water weight.

I try to keep my carbs under 30 when doing keto (even lower lately since I'm doing more carnivore) and not that your'e doing keto per se, as long as what I eat fits within that 30 carbs I'll eat it. So I'll eat a piece of bread most of the time by making a half a sandwich with it, etc. I rarely do sugar while on it though, sugar just not being good for you period if eaten a lot.
With WW it's all about the points, and most fruit is FREE!!

As of today....the 10 pounds I gained over the last 2 months are now officially gone! Now let's just see how far this journey takes me....

Food doesn't metabolize that fast to actually put on weight. It was more likely just water retention. It usually takes a week or a little more for what we eat to be stored as fat.
