I just heard him say he's kept it off for 2 years, and actually adjusted his eating where he wouldn't lose any more weight because he thought he was getting too skinny.

Does the weight stay off on any 'diet'? That's why whatever you do you can't look at it as a diet, but a lifestyle change. Just always watch the carbs, although you don't have to be quite as strict as when you were losing.
There is a tendency to go up again but with some diets the subsequent rise may be much faster and it may also go beyond the initial starting point. People have had a lot of experiences like that with extreme diets, including Atkins style diets. High protein low carb but within reason may be easier to keep up with. With a lot of vegetables and mostly healthy fats. And of course, little sugar.

Could be that he was inspired to apply some discipline that he lacked previously. Also, people react differently to various diets. Some people become immune to Atkins type diets and stop losing weight on them. Or at least it becomes as difficult as with any other diet.

I always have a pack of butter in my fridge but I don't use it that much, only as an occasional treat on a slice of bread. I mostly use olive oil for sauces and canola oil for cooking. I eat a lot of fatty fishes though.

Need to stop the canola oil though. It's not really natural like olive oil, coconut oil, avocado oil, etc.
It's my hope that you'll never use canola oil again! Why? Because of GMO's (genetically modified organisms, see below) and the harmful side effects from the processing of this oil.
