With my gut issues, it looks like something I'm going to get back to and Rog will be grateful because he LOVES home made soup! I used to make soup by boiling soup bones and then got away from it by just using hamburger and didn't realize I was doing us a disservice... I don't even bother getting the soup bones when we butcher anymore, but that's going to change!!! They keep saying how messy it is to make but I, personally, don't see the problem. You boil bones with carrots, celery and onions to make a broth. Use a chicken or turkey carcass... my mom used to can chicken and we loved it and loved the jelly in it. She made a Ukrainian dish called studinetz from boiled pork hocks and we LOVED it! How good that stuff was for us and we didn't even know it!
