    Cool

    HEALTHY PIZZA

    1 cup riced cauliflower
    3 cups mozzarella, divided
    1 teaspoon dried oregano
    1/2 teaspoon garlic salt
    1 teaspoon crushed garlic
    1 egg
    Olive oil

    Toppings: Onions, green, red, or yellow peppers, Italian sausage, mozzarella.

    Pulse one head of chopped cauliflower into chunks in a food processor until it looks like grain. Microwave the cauliflower for 8 minutes.

    In a medium bowl, stir together 1 cup riced cauliflower, 1 1/2 cups mozzarella, oregano, garlic salt, garlic, and egg.

    Spray a cookie sheet with cooking spray, or use pizza pan lined with good parchment paper. Pat mixture out into a 9-inch circle. Brush with olive oil. Bake the crust at 450° for 15 minutes.

    Meanwhile, brown sausage in a little olive oil. When it's no longer pink, add the onions & peppers sautéing until onions are soft.

    Top the pizza with 1 1/2 cups mozzarella, the above toppings or your favorites toppings, and broil 3-4 minutes or until cheese melts.

    P.S. I use garlic powder instead of garlic salt. :-)

    im on a high protein very very very low carb intake.... due 2 my high risk stroke time bomb im having gastric by pass to take the rest of my weight off..... i do exercise but my weight loss has stalled for quite sometime. see what happens when u get older lista?

    This is a wonderful low carb cookbook that I ordered from Amazon. I've made some of the recipes. Many of them are pretty quick, easy, and always turn out delicious.

    To start I suggest the "Garlic Knot Chicken Wings" for an appetizer or lunch; roasted cauliflower, sweet potatoe cakes, and for dessert, butter pecan pound cake.

    sadly, I'm already at the weight loss stalling age.
