You are right and don't get me wrong, I like meat. It's just hard to fit it in OMAD. That's a good idea about eggs. I am tracking my food only for the macros right now, I came up short so I need to think on that some more. I did eat salmon last night and I'll think about what I can have tonight. It's more planning and tweaking at this point.
edit: I started thinking about what gives me the biggest bang for my buck and I thought, Fried Rice! My DIL in Vietnamese and her parents make the best fried rice I've ever tasted. I thought, I could use riced cauliflower, then it hit m, Quinoa! (remember, I'm not doing low carb) So I found this recipe that looks good:
