Fuego, I Need Some Expert Help

My wife and I are touring the local BBQ Pits and tonight we checked in at Blue Smoke in East Jordan. I order the 2 meat BBQ platter. I ordered rib ends as one of the meats. My question is how do you eat them? I was cutting the center out that had the two bone buttons in it. Do you cut around the white cartilege or finger-food them and eat around the bones?

I've heard of rib ends, and I think I've had them, but can really remember how I at them. So no expert here. lol.

Seriously, I never see them anywhere. At least not where I eat.

That might help explain why I had never heard of them. Tasty but too much trouble.

Just found a pic. Mine were not this thick but rather thin. You can see the trouble with eating them.

I’m still going with pulled pork and burnt ends as my standby with an occasional rack.

Except they sliced mine way too thin. Reminded me of eating squirrel. Tastes great but you really have to work for it.
