Coffee Jelly
COFFEE JELLY:
That's right all you coffee lovers, I made Coffee Jelly today! This is really something - coffee with a hint of vanilla. Have any of you ever had or made coffee jelly? Now you can have your coffee and eat it too
Ingredients:
4 cups VERY strongly brewed coffee
(preferably a darker roast)
1/4 cup lemon juice
5 1/2 cups sugar
1 1/2 - 2 packages powdered pectin.
1/2 - 1 teaspoon vanilla extract (depending on how much vanilla flavor you want).
Directions:
Stir coffee and lemon juice together in a saucepan.
Bring to a boil over high heat.
In a separate bowl whisk together sugar and pectin.
Add sugar mix to boiling coffee mixture all at once and whisk vigorously for 2 minutes or until sugar and pectin are fully dissolved.
Return mixture to a full rolling boil and boil exactly 1 minute.
Remove from heat.
Add your vanilla extract if you're using it now.
Ladle into sterilized jars, wipe rims, and put on the lids and bands.
Process in a water bath for 10 minutes.
Remove from canner and place on a clean towel.
Let the jars cool and seal. You'll soon hear the 'ping' of your jars sealing. Enjoy!!

What was that jelly or something you sent me several years ago? I can't remember now.

I've never made jelly, but if you can make pomegranate jelly then this'll be a piece of cake for you...actually it might taste good spread on some cake. ;)
