    What did you make to eat today?

    Schnitzel with mashed potatoes and broccoli. Sooooo good. This is the recipe I use but I omit the thyme.

    What my mother calls 'hamburger pie' which is her version of shepherds pie. Made by Mrs fuego. But instead of mashed potatoes on top, substituted cauliflower mash for a good low carb hamburger pie. :)

    TThe hamburger pie is a pound of hamburger meat with green beans mixed in and a can of tomato soup mixed in and all cooked together and the soup reduced down. then a layer of cheese on top, then the cauliflower mash, then more cheese, and baked in the oven.

    Since I've been eating low carb, I had the brainstorm one time about replacing the mashed potatoes with cauliflower 'mashed potatoes'. All you do is break up the head of cauliflower and boil it until tender, put in a blender, and add a some of the water you cooked it in and a little cream until you get it to the consistency of mashed potatoes. Your brain makes it taste like mashed potatoes when you eat it. :)

    I had our first real harvest from our garden today. Fresh new potatoes, beets and carrots. Carrots we ate uncooked. Made some hamburgers that Rog bbqd. Super duper delicious!!

    We went over to my aunt and uncle's and picked a half an icecream bucket of raspberries. I'm gonna wash them and we'll have a midnight snack of raspberries and cream.

    Heaven!!!

    I missed that part when I first read it...those are home grown! Your growing season is probably shorter than most of us and yet you're harvesting already, impressive! How large is your garden area?

    Making plum jam today, but that's not what we're going to eat today, but rather leftovers from yesterday when we had friends over for dinner; Indian chicken stew (Korma) and potato salad with green salad. I think that's exactly what I posted the last time I was visiting this thread, too. My favorite when we have guests.

    I wanna see your menu when you have your Polish friends over.

    Last night I scanned my pantry for something quick and filling...Kraft Mac & Cheese was chosen.

    Speaking of low carbs...

    I made "Lasagna" with Eggplant instead of pasta - I just used thinly-sliced eggplant and layered it with the seasoned hamburger, marinara sauce, spinach and cheese.

    It came out great and was quite delicious.

    Not terribly large. About 75 hills of potatoes, a couple rows of peas, a row of carrots, a half row of multicolored carrots, a halft row of beets, a couple rows of cucumbers and some corn.

    This picture is a couple years old, but same garden patch.

    We have cucumbers ready now, too. Apparently a very early variety as it's only a couple of plants out of all Rog planted... and yes, we have a very short growing season... most people wait till the long weekend in May to plant and we can expect first frost often by the end of August. People start covering their cucumbers and tomatoes with blankets every night.
