My mother makes this kind of shepherd pie that she calls 'hamburger pie'. Cook ground beef, mix in a can of tomato soup and green beans and then you put a layer of mashed potatoes on the top and cheese on top of that. Then bake in the oven. One time to make it low carb (and actually organic too, I bought all organic ingredients) I got Mrs fuego to use the cauliflower 'mashed potatoes' and put it on top. I mean you really couldn't tell the difference without anything to compare it too. Gave it to my sister and BIL to see of they could tell (I didn't tell them until after they ate it) and they didn't even notice. Your brain just kind of turns it into mashed potatoes since that's what you think they are.
Anyway, cauliflower can be used as a substitute for a lot of things if you're going low carb. I think I've read some make pizza 'dough' out of it too.

Had not thought of using it with Shepherds pie...yes it really does taste VERY similar....

Frozen Chosen
For lunch, an almost burned grilled cheese sammich and for supper, left over meat loaf sliced and fried with leftover boiled potatoes fried in butter, cooked carrots and a selection of raw veggies.

Its been years since I've made this from scratch...pierogies! I made two kinds, potato and cheese and kapusta (sauerkraut) and they both turned out great. :)
