It was a cool day so I made some homemade chicken noodle soup. Then I wanted to do something with the apples that are starting to fall off my tree so I went with this recipe for apple cake except I turned it into apple nut bread by baking it in loaf pans and adding some chopped walnuts...delicious!

For the first time in my life, I made a dish I absolutely L.O.V.E!!!
My mom used to make it for me a couple times a year and so I haven't had it since she passed away 5 yrs ago. It's something many people don't like because it's jellied meat, pork to be exact. I eat it with vinegar ...... my first bite almost stopped my heart it was so good. My only criticism is that I could maybe use more garlic next time. I used fresh onion instead of powder, added celery and a bay leaf.
O.MY.GOSH.
It was so so so so good.
Had it with fresh garden potatoes.

I just never got a taste for it, same thing with head cheese, I knew what was in it and never wanted to even try it. I do however have a friend who loves it and eats it with vinegar too. :)

Resident Chocolate Monster
Today I made fried green tomatoes (the only thing producing in my garden), Spinach ravioli, and mini pizzas...nothing fancy
Last night was MUCH better....curried shrimp, steamed broccoli, and brown rice...super yummy.

I made this yesterday but I'm still eating it today. ;)
Strawberry Delight Cake
Ingredients:
1 box yellow or white cake mix
1 large box instant vanilla pudding (I use the sugar-free)
3 oz pkg cream cheese
1/4 cup powdered sugar
2 1/2 cups milk
8 oz container Cool Whip
1 pint fresh strawberries
2 T sugar
Directions:
Prepare cake mix acording to directions and bake in a 9 x 13 oblong pan until done. Let cool. Wash and slice strawberries to 1/4 inch or thinner. Mix in the 2 T sugar and set aside for 1 hour mixing occasionally.
After cake is cool, beat softened cream cheese and powdered sugar until smooth, add the milk and pudding mix and beat 2 minutes until it starts to thicken. Spread pudding evenly over the cake.
Drain the juice from the strawberries and place the slices evenly over the top of the pudding layer. Put in fridge to let set at least an hour. When ready to serve spread the cool whip on top and enjoy.
