    Another omelet. Ground beef, spinach, tomato, cheese. Purdy ain't it?

    The only reason it's so 'styled' is that I had too much ingredients for one egg and it spilled out. It was all supposed to be on the inside. :)

    I didn't do photos.. but here goes.

    A couple of weeks ago, Duane and I had dinner out and one of the things was sweet potato and maple bacon with some special salt stuff french fries.

    So... I decided to experiment.

    I got some apple wood and some cherry wood bacon. A lovely red yam.
    After I did up the bacon and added the sliced potatoes, I also added pecans, dried tart cherrys, and apricots.. poured some maple syrup all over it. (not a lot mind you)

    Let it all come together, and after taking it out of the pan, did a couple of eggs for on top. The salt we used was our red hawaiian..

    It turned out really, really good.

    I've got a few tweaks for next time.

    Today's Sunday Dinner was Baked Chicken (with mushrooms and sweet onions), Steamed, Buttered Cabbage and (Birds-Eye) Rice with (bits of) Broccoli, Carrots and Onions...

    (First time in a while that I didn't make a cake or pie for Sunday - Not feeling too well, so we'll just have some Haagen-Dazs for dessert)

    That sounds wonderful, too bad you aren't local we could have traded. I didn't cook and went with just a Ball Park beef frank and some leftover spaghetti salad...but...I had a craving for pumpkin pie so I made one.
