A Great Way To Eat Cauliflower
Even though I am not on Facebook, I go to former QVC Host Lisa Robertson's page and she always posts really great recipes. I thought this sounded amazing, and thought some of you, like Valiant Woman and others might like this:
Exotic Spice Cauliflower Couscous

Brace yourself! This is kind of awesome!!!!!
You will need:
1 head cauliflower
5oz raw cashews
3oz golden raisins
Juice of 2 lemons
1/2t lemon zest
3T fresh parsley
1t Za'atar
1t cumin
1 garlic clove crushed
Salt and pepper
Cut cauliflower into small florets.
Put in a food processor (or Vitamix) in small batches until it is the texture of couscous.
Put in a large skillet on medium heat for 9-10 minutes, stirring often.
Set it aside in a large bowl and let it cool.
Put raisins in water for 15 minutes.
Drain water and add raisins to cauliflower.
Toast cashews by putting them in a large skillet on medium low until they are golden.
I like them a little "over golden" :)
Add to cauliflower
Add chopped parsley to cauliflower.
Add in: juice of lemons, lemon zest, za'atar, cumin, garlic, salt and pepper.
Very important: Let it sit 15 minutes for the flavors to blend!!!!
Serve with attitude and see how much they love it!!!
This would be an amazing side dish or you could add chicken. Either way, you don't feel like you are eating vegetables :)

Sounds delicious - I've made cauliflower "mashed potatoes," that came out very tasty, but Hubby didn't like it - Couldn't fool him - So I haven't made it any more.

This sounds very good, but I'd use cilantro instead of parsley, but that's just me. Parsley is literally the only herb I've ever tasted that I don't like. Tastes like dirt to me.....

I like cauliflower with a thick creamy white sauce and shrimps ... some times I exchange the shrimps for bacon. Jummy!

Yes! Sounds delish. I'm allergic to raisins, so I'd have to omit them. I've done the cauliflower substitute for potatoes and liked it. My next venture is to make risotto using cauliflower, which I think resembles your recipe. :)

Off topic but I don't think I've heard of that before, does that mean that you can't eat grapes either?

Yeah, I always take recipes and make them my own. Like I said, I'd never use parsley, but I would use cilantro.
In place of raisins, you could use dried cherries, cranberries, or goji berries. Lots of things you could use instead.

Yes, allergic to grapes too. Which is why I was never fond of wine B.C.
