Quick N Simple Mac N Cheese
Toss a box of Elbow Macaroni* (sorry, but I don't know how to make a small batch - LOL) in salted, boiling water until tender.
Drain (but don't rinse) and pour into large mixing bowl
Add Salt N Pepper (sometimes I add a pinch of garlic powder)
Add 1/2 stick of (room temperature) Butter
In a separate bowl, Beat together 1 Egg and a Cup of Milk (I use Almond Milk)
Pour egg mixture over pasta and mix well - (Add more milk if pasta soaks a lot of it up)
Stir in as much Cheese as you like - Shredded and/or block cheese cut into chunks - Any kind of cheese, (whatever you prefer) - I use Sharp Cheddar, Colby and Mozzarella, then I sprinkle that shredded "Mexican Blend" on top
Pour into Casserole/Baking Dish
Bake @ 350 degrees for 30-40 minutes (until it is just set)
Remove from oven immediately and serve warm - YUMMO!!!
(*You can also use Pasta Shells, Penne or Ziti, if you like)

Thanks for reposting that Romans! LOL...I've been craving it and just made some a couple of days ago using a recipe that calls for making a roux of flour and butter but I like your way better! Going to have to give it a try next time. :)

I have a friend who makes hers with the roux, but honestly, it doesn't taste any different (or better) than mine.
I like to keep it (cooking and baking) as simple as possible - If a recipe calls for more than 5 or 6 ingredients (besides salt and pepper), I'm not interested
