It's not so much that I don't want or know what to cook, but that it's cast aluminum which has a possible link to alzheimer's. There's nothing conclusive, but it's made me shy away from any cookware that is aluminum.

If I were to buy an electric stainless steel pressure cooker, I'd probably use it a lot.

I would not use aluminum either. I have a stainless steel pressure cooker.
I will try to share a recipe.
This pressure cooker is good because we get good flavor and none of the fat.

Walmart seems to be cheaper than the PCP XL site:

But the PCP XL site seems to be giving you extra bonuses:

I made pot roast, meat loaf, and cooked fresh collards plus I steamed some broccoli and cauliflower and mushrooms...as soon as the canner screen comes in I will try the 6 minute perfect boiled egg and can something..tonight we are having fajitas.

Since retiring one of my goals is to prepare healthy meals as cooking and eating right has been hard the past 20 months in a camper..

My kitchen is still small but with the right equipment I can do it..this cooker enabled me to downsize from 2 to one and eliminated my need for a canner...
