    Pizza and Cookies Go Gluten-Free

    This is my favorite cooking show, great recipes and they explain the science and dynamics involved in cooking. Here's a recent episode they had on gluten-free cooking:

    At Bible study last night, someone brought an unbaked cheesecake with a brownie crust. I had a piece, thinking I was cheating. It was delicious and much tastier than an oreo crust.

    I found out later it was gluten free. Oh my gosh. SO GOOD! With no consequences!!! YUMMMM!!!!

    I think what I have is more of a wheat allergy, rather than gluten sensitivity. Gluten is found in other grains as well....

    I tried to explain to you guys when I talked about having to eat vegan and mostly raw, that so many healthy alternatives exist that are BEYOND delicious. Toldja so toldja so.

    I make some raw "no bake" chocolate cookies that are nutrient-dense, and literally taste like fudge. No joke.

    I haven't had any doubt that cooking and eating healthy doesn't mean tasteless. It's more, for me, that most people don't bring gluten free for snacks. They don't even think about it. This lady has a daughter who is at the extreme end of gluten sensitivity, I found out, so she does all her cooking and baking gluten free when her daughter's around. She even said that the pan was "double washed!" It was a dessert they all love, so she brought it to Bible study.

    I understand. I'm having fun with you guys. I guess I've been eating gluten-free off and on for literally 20 plus years, so I'm not new to that world. I guess it still surprises me when people actually post that cooking gluten free can actually taste good. A fantastic gluten-free brand I was purchasing back in the 90s is Amy's. Some of the best cookies on planet earth. Honest to goodness.

    Udi's gluten free bread tastes exactly like "regular" bread. Same with a brand called Kinnick-Kinnick. Kroger's healthy section has an excellent selection of gluten free stuff.......

    If they stopped hybridizing all of the wheat and stopped pouring Roundup on everything, we wouldn't have to have gluten free stuff. That's the shame of it all. Monsanto IS EVIL INCARNATE.

    For me, I think it's been about 5 years eating mostly gluten free. I sure feel better when I do, with most joint pain gone and happier intestines, esp. with the diverticulosis, which may have even been caused by the wheat allergy... I've had gastro-intestinal problems my whole life.

    I sometimes buy the Udi's muffins. I quit trying GF bread because it all tastes like cardboard to me.... but maybe since you recommend it, I'll give it another shot. It's so expensive to buy and then throw away because it's inedible. There are times when a slice of toast with PB&J would be absolute heaven. It's probably my all time favorite comfort food.

    In total agreement with hybridization, although I tend to believe that GM is far, far worse (you probably do too) ... and Monsanto is the devil.

    Know what? I was confusing Amy's with Pamela's with regard to gluten free cookies. Pamela's is the one that has the best cookies EVER. Amy's has amazing frozen, organic, stuff.

    But if they don't have anything near you, you could order from their site. They have tons of good stuff.

    The dark chocolate chunk cookies, the shortbread cookies (both pecan and regular)....just....
