I'm in the process of baking my mom's snowball recipe... one pan in the oven and 1 pan ready to go in, but I was just comparing recipes and mine is quite different in the amounts of ingredients...
Mom's recipe:
3/4C marg or butter
1C sugar
1 tsp vanilla
1/2 tsp salt
2C flour
1C chopped walnuts or pecans
bake @350 for 20 min. and roll in icing sugar.
The recipe you posted:
2 cups butter, softened
1 cup confectioners' sugar
2 tablespoons water
4 teaspoons vanilla extract
4 cups all-purpose flour
2 cups chopped pecans
Bake @300 for 20-25min.
I just took the first pan out and turned the oven down to 325.

There are variations in the recipes for these. I've had some that are quite crisp which your recipe would seem to be, but the recipe I follow turns them out with a little less crunch and a little more softness tho I do increase the temp to 325 degrees. I like them both ways, its just personal preference which way you like them the best.

I ate one after I got them covered with icing sugar and I remembered why I like them so much. A rich nutty flavour. The very same reason Rog doesn't like them... too many nuts!!! And you're right... they're crunchy. It's been a looonnnng time since I had one.
Unfortunately, with watching how much wheat I eat, I probably won't get my fill of them!!! Very very good!!!
