Because it's a vision from God to inform JJ of what's happening. The demon may or may not be a real demon, but it has it's significance in the vision for God to illustrate what is happening in the spirit to JJ what is happening and convey a message.

How would he know that it's from God when the vision contains nothing more than a demon and the demon is interacting with him ?

I've seen Satanic angels in a crystal clear dream vision where they were standing about 100 feet away from me and I could see their facial features clearly. They weren't talking to me or interacting with me and it was a part of a vision that started with God speaking audibly and showing me things happening elsewhere. Whatever it was that I saw about the Satanic angels and their activities, it certainly wasn't their version of things. I was merely observing them as if through a security cam.

Jesus only asked them about information pertaining to their demonization of a particular individual that he was ministering to. The Asian church that went New Age only did so after they decided that the demons that were talking to them were a source of information on spiritual matters in general.

Does it say anywhere that Jeremiah Johnson took authority over the demon so as to force it to only tell him the truth ? Does it even say that the vision was from God ?

That's not different to visions described in the OT. "Visions involving demons" is different to "messages from demons".
