Oh...after taking it out of the oven loosely cover it and let it 'rest' for about 30 minutes before cutting it so that the juices reabsorb back into the meat. ;)
"Allowing the meat to stand away from the heat before serving allows the juices, which have been driven to the centre of the meat to redistribute throughout the meat and be reabsorbed. As a result the meat will loose less juice when you cut it and be far more tender and juicy to eat..."

the resting phase happens whether I mean for it to, or not! I always have several loose ends to tie up before we can eat the turkey.

I brined it overnight and put it in a Reynold's oven bag as I posted previously but I forgot to mention that I do decrease the oven temperature to 325 degrees and roast it a little longer, the lower temp also seems to help tenderize it more.
Just realized that I never posted the results...I seriously think that it was the best, moistest, tenderest and most flavorful turkey that I have ever made yet so far. :)

My Thanksgiving "spread" will not be picture worthy. It's always more of a buffet style set-up that strings around the kitchen.
