Within my ethnicity, tho, one of my very favorite foods is something called studinetz. I absolutely love it. A big chunk with vinegar and a piece of bread and butter.... I can polish off a huge amount... and come to think of it, I haven't had it since my mom passed 5.5 yrs ago. I may have to make some for myself!

When we are in Kenya our friends will slaughter a goat to honour us and they always make sure they give us the part of the goat that is most delicious (in THEIR opinion!) ... the stomach. It is greenish and does NOT look nice. Normally, we must touch the goat to say that we approve of it before they take it behind a shed to give it a blow in the head and cut its throat. Then after a couple of hours it has been roasted and is served .... it's almost so that you feel the meat isn't quite dead yet. Eeeek. But we try not to think of what the greenish thingy looked like, and I must admit I'm glad there are always dogs and cats sneaking around in the darkness. Some of my helping goes that way :)
