    What does a New Covenant prophet do ?

    I'll try to keep this down to the clear teaching of the New Testament.

    The ministry gift of the prophet is distinct from the gift of prophecy. The ministry gift is listed among the five in Eph 4:11, the gift of prophecy is listed among the nine gifts in 1 Cor 12:10

    The general bearing of the ministry of the prophet is the same as the main purpose of the gift of prophecy :

    1 Cor 14:3 But he who prophesies speaks edification and exhortation and comfort to men.

    Acts 15:32 Now Judas and Silas, themselves being prophets also, exhorted and strengthened the brethren with many words.

    The prophet naturally employs the gift of prophecy and the two terms are both used frequently towards the end of 1 Cor 14. There are 6 revelatory gifts and they should naturally belong to (but not exclusively to) the ministry of the prophet.

    A prophet may foretell the future, Agabus' prophecy about Paul's fate in Jerusalem and the coming famine are examples of that. Neither prophecy is integral to the finished Bible like the book of Revelation is, they relate directly to circumstances specific to people discussed in the Bible and not directly to the reader.

    Jesus called himself a prophet :

    Mat 13:57 So they were offended at Him. But Jesus said to them, “A prophet is not without honor except in his own country and in his own house.”

    And he serves as an example to us. Most of his prophecies concerning the future are integral to the finished Bible but some are specific to people being discussed. He foretells Peter's denying him, he discerns the true spirit of Judas Iscariot, he speaks divine knowledge about the Samaritan woman's five husbands and is called a prophet by her.

    He also performs prophetic signs and wonders. He rebukes a fig tree and it withers. That serves as a prophecy concerning the future but it was also a sign to his immediate audience. False prophets are said both in the gospels and in the epistles to produce false signs and wonders and lead people astray, one would naturally assume that a true prophet would do the same, after Jesus' example, and employ the gift of faith and the gift called the power to work miracles for that. Which could include producing signs in the sun, moon and stars as Joel talks about regarding the days of Pentecost and on.

    We have the example of prophecy, signs and wonders being tied to the ministry of the prophet from the account of the end times in the book of Revelation :

    Rev 11:3 And I will give power to my two witnesses, and they will prophesy one thousand two hundred and sixty days, clothed in sackcloth.”
    4 These are the two olive trees and the two lampstands standing before the God of the earth. 5 And if anyone wants to harm them, fire proceeds from their mouth and devours their enemies. And if anyone wants to harm them, he must be killed in this manner. 6 These have power to shut heaven, so that no rain falls in the days of their prophecy; and they have power over waters to turn them to blood, and to strike the earth with all plagues, as often as they desire

    10 And those who dwell on the earth will rejoice over them, make merry, and send gifts to one another, because these two prophets tormented those who dwell on the earth.

    The book of Revelation may not always be completely literal in its renditions but its rendition of New Covenant prophets prophecying and working signs and wonders is in line with what can be inferred from Jesus' ministry and what is said about what false prophets will do which should be viewed as a matter of counterfeiting the real thing.
