Made some homemade mac and cheese and just finished the first layer/crust of this 4 Layer Chocolate Delight...if you've never had it, it super easy and super delicious:

^ That sounds and looks delicious, Krys!!! - However, I don't like Cool Whip or any kind of whipped cream...
Any suggestions as to what to use to replace that ingredient?

Well, you can skip the top layer of Cool Whip and it'll still taste great, I had a slice last night without it. As for the cream cheese layer, you can skip it there too...I forgot to add it once and it just made that layer richer.
It tastes really decadent but its not really high calorie especially if you're like me and use the sugar free pudding. I think you'll still really like it, let me know if you try it!

I made a run to a local place that serves a great Polish Platter special on Thursdays...2 pierogies, 2 stuffed cabbage rolls, mashed potatoes, kapusta and kielbasa.

I made Fish N Chips - Fried some Tilapia and made Garlic Fries to go with (and a side of steamed brussel sprouts)
Baked spaghetti and sour cream coffee cake.
