    Another beef, cheese, spinach, and tomato omelet. I always have too much ingredient for one egg, and it makes it hard to make trying to put all the ingredients in one at a time and fold over and melt the cheese, so this time I just cooked the ground beef and spinach together as usual, then melted the cheese on top of that, then just put that whole thing in the omelet together with the tomato. It worked a lot better because it doesn't have to fold over perfect and I'm not melting the cheese by folding it over. Two eggs would work better, but for some reason two eggs are just too much for me.

    Fuego, you've got to video how you make those omelettes. ;)

    Yesterday I made a small roast chicken with potatoes and carrots, then I made a loaf of banana nut bread and a loaf of banana mini chocolate chip.

    My sweet potato concoction.
    LOL..

    I didn't get pics last time so I decided to do a video.. of course, I didn't think of it until everything was in the pan.. gah!
    I didn't use bacon this time, so I browned the potatoes in coconut oil.. then put the pecans, tart cherries (dried) in.. then squeezed in the juice of one orange.
    then a bit of maple syurp and the peach.

    let it simmer for a while.. let it caramelize.. it was very nice!

    a bit of red hawaiian salt and pepper to cut the sweet.. good blend of flavors.. but we decided we like the bacon better.

    Another omelet for my LCHF. One egg. Cheese, spinach, onion, bell pepper, tomato. With 3 pieces of bacon. Egg, spinach, bell pepper, bacon, and butter used to cook it all organic. Butter is actually grass fed organic. I try to do organic where I can.

    Ham and cheese omelet with hollandaise sauce. Made the sauce just like in the video below. Simple one minute way to do it with an immersion blender. Worked perfect!

    As I was at a conference today we decided to try a store-bought cooked roast rather than cooking one ourselves and the kids who visit on Wed nights. It turned out to be silverside and was the consistancy of Spam(r).

    Fortunately it was only half price when I bought it.
