A tropical carrot cake just came out of the oven, the crushed pineapple makes all the difference! I tweak the recipe a bit and omit the raisins and coconut. I'll make the cream cheese frosting after it cools off:

I've never been a fan of carrot cake...just the cream cheese frosting.

My son's girlfriend came over to visit last night, and made us chicken fettucine alfredo. She's a keeper!

The main food I miss on this wheat/grain free WOE is corn. I was an frequent brown rice/quinoa eater, yet I don't even miss it. But corn?

I didn't think corn was bad for you. Other than it is high in carbs if doing low carb. Read this short few paragraphs at the link. I'll post the bottom line here:

You now where I’m going with this: It’s not about corn. If the entire health mess most of us find ourselves in were about corn, well, then . . . eliminating corn would solve the entire collection of problems. It does not.

But, eliminate the wheat and an unexpected and broad range of health benefits develop. That’s why the movement—not the book, but the movement—is labeled “Wheat Belly” and not corn belly, broccoli belly, beef belly, soda belly, high-fructose corn syrup-belly, or any other belly.

It’s called “Wheat Belly,” and it’s no mistake.

I'm still getting use to this Wheat Belly WOE even though I've been doing it since February. I struggle sometimes, but only when I'm out in a restaurant with friends, or holidays. But I've lost weight, sleep better, and feel better. So I've decided to stick with it and see where it takes me. :)
