    Our Church began the Daniel Fast today. We decided to eliminate beef & pork, but eat a little chicken & fish from time to time while on the Fast.

    So I cooked oxtails as sort of a last hurrah for a season.

    We are not big on having fruit & veggies only everyday. We're old school and it just ain't gonna happen. But we are determined to try and have no meat, poultry, or fish on some days. Which means I really need to be in the Lord's presence in prayer more often cause the spirit is willing, but the flesh is weak!

    You'd love them and they're so easy to cook. I always cook them in the slow cooker. Soak them in a little vinegar or lemon water for about 15-30 minutes, pat dry, rub with a little olive oil, season with your favorite seasonings, toss them in the crock pot with about a half cup of the broth of your choice, cook on high 6 hours or on low for 8 and voila! The most tasty, fall of the bone, tender oxtails. :
