    Something Comforting in a Pinch

    This is also called, "Twenty Minute Dessert" by renowned Mennonite cookbook author, Edna Staebler:

    Caramel Dumplings

    I double this recipe regularly. It is a wonderful go-to on a chilly night when something warm and sweet would do the trick! My husband loves it.


    Sauce:
    1½ cups brown sugar
    2 cups boiling water
    2 tbsp butter

    Stir all together in a pot until sugar has dissolved. Add butter and simmer while you mix the dumplings.

    Dumplings:
    ½ cup sugar
    ½ tsp salt
    1 tbsp butter
    1½ cups flour
    3 tsp baking powder
    ½ cup milk

    Cream butter, salt and sugar; add sifted flour and baking powder alternately with milk to make a stiff batter. Drop by tablespoonsful into boiling sauce. Cover and let boil GENTLY for about 15 minutes. Serve with or without whipped cream. (Personally, it doesn't need anything!)
