Krys, is there something similar in Polish cooking? I saw this yesterday and it looked familiar, plus I would like to try making these..

That looks pretty good! Personally I'm not familiar with a filled potato dumpling, pierogies yes, but not something that has a potato dough.

We do have potato pancakes and things like this:

Maybe AJ has some experience with it?

What my German family makes, we call Kleba. Grated raw potatoes, salt and flour. Boiled in bite sized pieces, then fried with side pork and served with boiled sauerkraut. Absolutely addictive.

I've had some variations of it... once I had the dough had been pressed through a potato ricer into the hot water and served with sauerkraut.

Another was made into tennis ball sized balls and cooked in a roaster with a ham with the water fairly deep.

This recipe is pretty close to what we do, but they suggest it be served with bacon and onions, similar to the way many people serve perogies.

This is not something I've ever seen.
