    My garden

    I forgot to go check on my zucchini, and any of you who have ever grown zucchini know that I now have a giant zucchini sitting on my counter. It's too big to slice and cook. I was thinking about zucchini bread. Any other suggestions?

    Not a big fan of zucchini but I love zucchini nut bread if its made using a small can of crushed pineapple...amazing flavor and texture:

    There are quite a few recipes on the net for it. It's a tasty way to use up some of the excess zucchini.

    Have you ever simply had raw zucchini? I've been surprised a lot of people never eat it raw. We slice it long and narrow like a fry. It has a slightly nutty taste. I wouldn't use a large one for it. It will be too tough, but it is a good way to eat some smaller tender ones.

    Zucchini will get away from you this time of year. The big ones aren't that great. I'd use it in zucchini breads.

    I have tried it raw...and y'all are absolutely right about the larger ones not being tasty raw...the seeds are ginormous!

    We used to pickle the big ones. Made them into rings and used red food coloring and a cinnamon spice type flavor. I have no idea where the recipe is.
