    Nuns are 'married' to Christ

This is just another way for the enemy to make a mockery of our relationship to Christ. It won't be long until gays and sinful people of all sorts will do this with no intentions of living holy before God.
It simply does not replace the Act of Salvation
God's people in a sense are already married to the Lord via salvation. However, there is also a wedding day ahead that will complete the act. We re the Church (Bride) and Jesus is the Bridegroom..

    I didn't see/sense any mockery.
I think she takes her relationship with Jesus very seriously.

She probably does and I have heard of nuns wearing wedding rings as a symbolic marriage...this formality though is totally unscriptural..

Humans are drawn to ceremony which is how the traditional WEDDING came to be...true marriage requires no such ceremony just as intimacy with Christ requires no 'wedding'. Either one is or one is not...

I would like to know why she needed to have this public ceremony and what her beliefs are regarding the Bible

she's obviously catholic.. there was a reference to it being sortof like a nun.. but instead of being cloistered she lives in the *real* world.. just won't consider any male relationship.

Yeah, she kinda reminded me of how a catholic nun would talk.
